Vegan Enriched Bread Recipe:

  1. In a bowl, combine the coconut sugar, water, coconut milk, and yeast. Stir well and set aside for about 5 minutes, allowing the yeast to activate.

  2. In a large mixing bowl, sift together the flour and sea salt. Add the room-temperature melted plant-based butter to the dry ingredients.

  3. Pour the yeast mixture into the dry ingredients and mix thoroughly. It's best to use your hands for this step to ensure thorough mixing and kneading in the following steps.

  4. Knead the dough vigorously for about 10 minutes until it becomes smooth and elastic. Form it into a ball.

  5. Place the dough ball in a large, lightly greased bowl (using melted plant-based butter is ideal). Cover it with a warm damp towel and put it in a dark, warm place to rise for at least one hour. The dough should double in size.

  6. After the first rise, punch down the dough and knead it again for 10 to 20 minutes. Grease a bread pan with plant-based butter or line it with parchment paper.

  7. Shape the dough to fit the bread pan, cover it with the warm damp towel, and let it rise in a dark, warm area for another hour or longer, if desired.

  8. Preheat the oven to 350 degrees Fahrenheit. Remove the towel and place the bread pan with the dough in the oven. Bake for 30 to 35 minutes until the top is slightly browned, being careful not to burn it.

  9. Remove the bread from the oven and allow it to cool for at least 10 to 20 minutes in the pan. Carefully remove it from the pan and let it cool fully on a wire rack.
