Recipe: Fresh Cucumber Sandwiches

Servings: 2 (feel free to adjust as needed)


Ingredients:

  • 1-2 cucumbers (depending on the size)

  • 1 tomato, chopped into little chunks

  • 1 avocado, peeled, stoned, and chopped into little chunks

  • 1-2 cups fresh arugula

  • Dash of sea salt, to taste

  • 1-2 tsp minced garlic

  • 1-2 tsp Bragg's Amino Acids

  • 1 tablespoon hemp seeds

Instructions:

  1. Time to get hands-on! Peel the cucumbers and slice them in half lengthwise. Scoop out the seeds and pulp to create a little veggie boat for our scrumptious stuffing.

  2. In a bowl, mix the chopped tomatoes, avocado, fresh arugula, sea salt, minced garlic, Bragg's Amino Acids, hemp seeds, and the leftover cucumber from scooping. Give it all a good mix, and adjust the seasoning to your liking.

  3. Now, the best part—stuff the salad mix inside the hollowed cucumbers, making sure to pack them well. Voilà, you've got yourself the freshest and healthiest cucumber sandwiches!
