Mushroom Tofu Walnut Burger

Hey there, foodies! I recently whipped up a fantastic vegan burger recipe that was a big hit when I served it to my hubby for lunch. These Lion's Mane Mushroom Tofu Walnut Burgers are incredibly filling and packed with flavor. Mushroom Tofu Walnut Burger Recipe:


Ingredients (Yields 6 burgers):

  • 8 oz Lion's Mane mushrooms, finely chopped

  • 8 oz extra firm high-protein tofu, drained and crumbled

  • 1 cup walnuts, finely chopped

  • 1/2 cup fingerling potatoes, cooked and mashed

  • 1/2 cup breadcrumbs (use gluten-free if needed)

  • 2 cloves garlic, minced

  • 1 tablespoon coconut aminos (for added flavor)

  • 1 teaspoon Old Bay Seasoning

  • Salt and pepper to taste

  • Avocado oil for frying

Preparation:

  1. Start by cooking the fingerling potatoes. Boil or steam them until they are soft and easily mashed. Mash them and set them aside to cool.

  2. In a large mixing bowl, combine the crumbled tofu, chopped Lion's Mane mushrooms, chopped walnuts, mashed fingerling potatoes, breadcrumbs, minced garlic, coconut aminos, Old Bay Seasoning, salt, and pepper. Mix everything together until well combined.

  3. Shape the mixture into burger patties. You can make as many as you prefer, depending on your desired burger size.

  4. Heat a bit of avocado oil in a skillet over medium heat. Once hot, add the burger patties and cook for about 4-5 minutes on each side or until they are golden brown and cooked through. Frying allows for a nice browning on the patties.

  5. Toast your burger buns in the skillet or oven until they're lightly browned.

Option for Baking: If you prefer a healthier cooking method, you can bake the burger patties in a preheated oven at 375°F (190°C) for about 20-25 minutes, flipping them halfway through for even cooking. Baking will result in a slightly different texture but is a great alternative.
