The beauty of these treats lies in their endless possibilities – you can experiment endlessly with different flavors and ingredients. What sets raw cookie balls apart from the traditional baked cookies is their wholesome nature; they skip the refined flours and eggs, relying instead on a mix of nuts, spices, dried fruits, and seeds that offer a tantalizing mix of aromas, tastes, and textures. Today, I'm excited to share with you a recipe that's been close to my heart for over a decade: Coconut-Mango Shortbread Cookie Bites. Coconut-Mango Shortbread Cookie Bites Recipe:

Ingredients:

  • 1 cup Brazil nuts

  • 1 cup Macadamia nuts (dry)

  • 2 tablespoons lucuma powder

  • 1 cup dried organic unsulphured coconut flakes

  • 2/3 to 1 cup dried unsulphured mango (finely chopped)

  • 10 Medjool dates (pitted)

  • 1/2 teaspoon organic non-alcoholic vanilla extract

  • 1 teaspoon ground ginger

  • Drizzles of agave nectar


Instructions:

  1. In a food processor, pulse the nuts until crumbly, ensuring they don't become oily.

  2. Add the remaining ingredients and pulse until a dough-like consistency forms.

  3. Using a cookie scoop or spoon, shape the mixture into ½ to 1-inch balls.

  4. Refrigerate to firm up or enjoy at room temperature. For optimal handling, store in an airtight container in the refrigerator.

Ingredients:

  • 1/2 cup cacao butter

  • 1/2 cup raw cacao powder

  • 1 tablespoon mesquite powder

  • 1 tablespoon raw honey

Instructions:

  1. Heat water until it's just about to boil, then set it aside.

  4. Remove the bowl from the hot water and let the chocolate slightly cool and thicken.

  5. Dip each cookie ball into the chocolate mixture or pour the chocolate over them on wax paper.

  6. Allow them to slightly cool, then place them in the freezer or refrigerator to continue firming.

  7. Store the chocolate-coated treats in an airtight container in the refrigerator for the best results. Any leftover chocolate can be poured into molds for additional confectionery delights.
