Delicious Raw Chocolate Layer Cake! Every year, I whip up a fresh raw birthday cake for both my son and husband. Their birthdays conveniently fall just a day apart, right before Christmas – it's happening this weekend. While we're shaking things up this year, I couldn't resist sharing one of my all-time fave raw birthday cakes from back in 2013 when I was all about the raw food scene.


Picture this: a cake that's moist and brownie-like, paired with a frosting as smooth as creamy butter. To shake things up, I threw in a fruit layer that's more like a sorbet (though it gets a bit liquidy at room temp). The result? A cake bursting with flavor that got the thumbs up from my birthday guys and a bunch of pals.


Even though we're skipping cake this year, I'd love for you to give this raw recipe a shot. It's not just for birthdays – perfect for holidays or whenever you're craving a decadent chocolate treat! Enjoy! And now, the lowdown on the recipe:

Chocolate Layer Cake Recipe:

Cake Batter:

Ingredients:

  • 24 oz date paste

  • 3/4 cup coconut oil

  • 4 T vanilla extract

  • 1 tsp pink salt

  • 8 cups almond meal flour

  • 1/2 cup coconut flour

  • 1 1/2 cups cacao powder

  • 1/2 cup carob powder

  • 1/2 cup coconut milk

  • 1/2 cup coconut water

  • A few drops chocolate-flavored SweetLeaf Sweet Drops


Preparation:

  1. Mix date paste, coconut oil, extract, and salt till smooth.

  2. Toss in flours, cacao and carob powders, coconut milk, coconut water, and stevia. Mix till smooth like cake batter. Set aside.


Fruit Layer Filling:

Ingredients:

  • 1 1/2 cups frozen strawberries

  • 1 1/2 cups frozen cherries

  • 3/4 cup maple sugar

  • 1/4 cup maple syrup

  • A few drops clear-flavored SweetLeaf Sweet Drops


Optional Add-In:

  • Pili nut butter


Preparation:

  1. Blend all ingredients in a food processor until smooth and thick. Keep it kinda frozen, like sorbet.


Frosting:

Ingredients:

  • 2 1/2 cups ground raw cashews

  • 1/4 cup raw honey

  • 1/4 cup maple syrup or agave (or a mix)

  • 1/4 to 1/3 cup cacao powder

  • A few drops chocolate-flavored SweetLeaf Sweet Drops

  • 1/4 cup coconut oil

  • 1 T vanilla extract


Preparation:

  1. Blend ingredients till super smooth and thick like frosting. Refrigerate as needed.


Cake Assembly:

  1. Grease a 9-inch springform pan with coconut oil.

  2. Fill the pan halfway with cake batter, spreading it out.

  3. Optional: spread pili nut butter over the cake layer.

  4. Pour the fruity filling over the cake, spreading it evenly. Freeze for about 30 minutes.

  5. Add the rest of the cake batter and freeze for another 30 minutes.

  6. Take it out of the pan, pop it on a plate, and frost the whole thing. Freeze for 30 more minutes before digging in.

  7. Top it off with sliced almonds, vegan candy bits, or fruit. Keep it covered in the fridge or freezer. Enjoy!
