Today, I'm sharing a delicious recipe for a raw, creamy pie that combines the goodness of carob and cacao.

  • 1-1 1/2 T raw agave nectar

  • 1 T raw carob powder

  • 1 T raw cacao powder

Preparation:

  1. Grind the nuts in a food processor until they're almost like a powder.

  2. Add the remaining ingredients and mix well.

  3. Press this mixture into a cheesecake spring-form pan and place it in the freezer for about 1/2 to 1 hour.

Coconut Cream Filling:

Ingredients:

  • Flesh of two young Thai coconuts (about 1-1 1/2 cups)

  • 1 T coconut oil

  • 1 T raw mesquite powder

  • 1/3 cup raw carob powder

  • 1/4 cup raw cacao powder

  • 1 tsp organic vanilla extract (non-alcoholic)

  • 1 tsp ground cinnamon

  • 2-3 T raw agave nectar

  • 1-1 1/2 cup coconut water

Preparation:

  1. Combine all ingredients (except coconut water) in a food processor or high-speed blender.

  2. Process until smooth and creamy, adding coconut water a little at a time to achieve the desired consistency.

  3. Pour the mixture into a bowl and set it in the refrigerator while you prepare the cashew cream filling.

Cashew Cream Filling:

Ingredients:

  • 1 cup raw cashews (soaked for at least 1 hour)

  • 1/4 cup raw pine nuts (soaked for at least 1 hour)

  • 1 T raw honey

  • 1 T coconut butter

  • 3 T raw carob powder

  • 1/4 cup raw cacao powder

  • 3-4 T raw agave nectar

  • 1/2-1/3 cup coconut water

  • 1 tsp pink Himalayan salt

Preparation:

  1. Process the soaked nuts in a food processor until they become smooth.

  2. Add the remaining ingredients, except for the coconut water, and mix well.

  3. Gradually add coconut water to reach a creamy, smooth, and thick consistency.

Pie Assembly:

Other Ingredients:

  • 1/2 cup raw carob chips

Preparation:

  1. Remove the pie crust from the freezer and sprinkle 1/3 of the carob chips over it.

  2. Spread the cashew cream filling evenly over the crust.

  3. Sprinkle another 1/3 of the carob chips over the cashew cream.

  4. Pour the coconut cream filling over the top and lightly stir it into the cashew cream to create a zigzag pattern.

  5. Sprinkle the remaining carob chips on top.

  6. Cover the pie with plastic wrap and freeze for about 1-2 hours or until it's firm.

  7. Your Carob-Cacao Cream Pie is now ready to be served!
