April Food Focus Recipe: Creamy White Bean and Kohlrabi Skillet Cakes with Watercress Chive Salad

April is a great month to work with ingredients that feel fresh, light, and full of life, but that does not mean everything has to end up in a bowl.

This week, I wanted something a little different.

These creamy white bean and kohlrabi skillet cakes are crisp on the outside, soft in the middle, and paired with a peppery watercress chive salad that gives the whole plate a fresh spring lift. It is simple, satisfying, and a nice change from the usual salad or grain bowl approach.

That is one reason I like seasonal food focus cooking. It pushes me to use familiar ingredients in new ways.

Why I like this recipe

White beans are one of my favorite ingredients for building simple meals because they are mild, creamy, filling, and easy to work with. Kohlrabi adds freshness and texture without overpowering the dish. Then the watercress and chives brighten everything up and make the plate feel very spring-like.

This meal feels clean and nourishing, but still substantial enough to hold you over.

Creamy White Bean and Kohlrabi Skillet Cakes with Watercress Chive Salad

Ingredients

For the skillet cakes

  • 1 1/2 cups cooked white beans or 1 can, drained and rinsed
  • 1 cup kohlrabi, peeled and finely shredded
  • 2 tablespoons chopped chives
  • 1 small garlic clove, minced
  • 1/4 cup oat flour or fine rolled oats
  • 1 tablespoon ground flax or chia
  • 1 tablespoon water
  • 1/4 teaspoon sea salt
  • Black pepper to taste
  • 1 to 2 teaspoons olive oil for cooking

For the salad

  • 2 cups watercress
  • 1/2 cup shredded carrot
  • 1 tablespoon sliced almonds
  • 1 tablespoon pumpkin seeds

For the dressing

  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 to 2 tablespoons water
  • Pinch of sea salt

Instructions

  1. In a small bowl, mix the ground flax or chia with the water and let it sit for a few minutes to thicken.
  2. In a medium bowl, mash the white beans well, leaving a little texture.
  3. Squeeze excess moisture from the shredded kohlrabi, then add it to the beans along with the chives, garlic, oat flour, flax mixture, salt, and pepper.
  4. Mix until the mixture holds together. Form into 4 to 6 small patties.
  5. Heat a skillet over medium heat and add a little olive oil.
  6. Cook the patties for about 3 to 4 minutes per side until lightly golden and crisp.
  7. In a separate bowl, combine the watercress, shredded carrot, almonds, and pumpkin seeds.
  8. Whisk together the tahini, lemon juice, Dijon, water, and salt to make the dressing.
  9. Serve the skillet cakes warm with the salad on the side or lightly piled on top.

Optional flexitarian add-on

If desired, this also works well with a soft cooked egg on top or alongside a small piece of grilled fish.

Why this is a smart April recipe

This recipe still uses spring-friendly ingredients, but it does not fall into the trap of becoming another same-looking plant bowl. The skillet cakes give you a heartier texture, and the fresh salad keeps the plate bright and balanced.

That contrast is what makes the meal interesting.

It is easy enough for a weeknight, different enough to feel interesting, and simple enough to make again.
