This is barely cooking.

And honestly, that is exactly what I want at the end of August.

Cold fruit.

A squeeze of lime.

Fresh herbs.

A little texture.

Done.

When seasonal fruit is good, we do not need to do much to it.

Ingredients

  • 1 cup cold watermelon cubes
  • 1 ripe peach, sliced
  • ½ cup blueberries
  • Fresh basil or mint
  • Juice and zest of ½ lime

Optional Add-Ins

  • Plain Greek-style or plant-based yogurt
  • Chia seeds
  • Hemp seeds
  • Chopped pistachios
  • Pumpkin seeds

Directions

  1. Add the cold watermelon to a shallow bowl.
  2. Add peach slices and blueberries.
  3. Squeeze lime juice over the fruit.
  4. Add a little lime zest.
  5. Tear fresh basil or mint over the top.
  6. Add yogurt, seeds, or nuts if you want more staying power.
  7. Eat immediately while everything is cold.
