Summer Garden Rolls – Light, Crunchy, and Perfectly Snackable

These Summer Garden Rolls are one of my absolute favorite warm-weather snacks. They’re light, colorful, loaded with fresh veggies, and make a fun hands-on snack or appetizer.

If you’ve never made fresh spring rolls before, don’t worry — it’s easier than it looks. Once your veggies are prepped, all you do is soften the rice paper, roll it like a burrito, and serve with your favorite dipping sauce. So simple, and so good.

Ingredients (Makes 4 Rolls)

  • 4 rice paper wraps
  • ½ avocado, sliced
  • ¼ cup shredded carrots
  • ¼ cup shredded purple cabbage
  • ¼ cup cucumber matchsticks
  • 4 fresh basil or mint leaves
  • Optional: red bell pepper strips or sprouts

Peanut Dipping Sauce

  • 2 tbsp natural peanut butter
  • 1 tbsp tamari or soy sauce
  • 1 tsp maple syrup
  • 1 tsp rice vinegar
  • 1–2 tsp warm water (to thin)

Instructions

  1. Prep all veggies and avocado slices.
  2. Fill a wide, shallow bowl with warm water. Dip a rice paper sheet for 5–10 seconds until soft.
  3. Lay the rice paper on a clean surface. Layer the veggies, herbs, and avocado in the center.
  4. Fold up the bottom, then the sides, and roll tightly. Repeat for each wrap.
  5. Mix all dipping sauce ingredients in a small bowl, adding water until creamy and smooth.
