Summer Corn Gazpacho – Cool, Creamy, and Bursting with Antioxidants

Perfect for hot days, this vibrant chilled soup is sweet, tangy, and ultra-refreshing.

There’s nothing better than cooling off with a bowl of chilled soup on a hot summer day. And this Summer Corn Gazpacho is just that — cool, creamy, and packed with fresh flavor. It's one of my favorite go-to snacks or light lunches when I want something refreshing, nutritious, and satisfying without heating up the kitchen.

This gazpacho blends sweet corn, juicy tomato, crisp cucumber, and bell pepper into a naturally sweet and slightly tangy soup that’s perfect for sipping or spooning on a hot afternoon.

Ingredients

  • 1 ear corn (raw, kernels cut off)
  • ½ medium ripe tomato
  • ¼ cup cucumber, peeled and chopped
  • ¼ cup orange or red bell pepper, chopped
  • Juice of ½ lime
  • 1 tsp extra virgin olive oil (optional)
  • Sea salt and black pepper to taste
  • Optional: 1 tbsp red onion or a few fresh basil leaves

Instructions

  1. Cut kernels from the raw ear of corn and add to a blender.
  2. Add the tomato, cucumber, bell pepper, and lime juice.
  3. Blend until smooth, adding 2–3 tablespoons of cold water if needed to reach your desired texture.
  4. Taste and season with sea salt and black pepper.
  5. Chill in the fridge for at least 1 hour before serving.
