There’s nothing better than cooling off with a bowl of chilled soup on a hot summer day. And this Summer Corn Gazpacho is just that — cool, creamy, and packed with fresh flavor. It's one of my favorite go-to snacks or light lunches when I want something refreshing, nutritious, and satisfying without heating up the kitchen.
This gazpacho blends sweet corn, juicy tomato, crisp cucumber, and bell pepper into a naturally sweet and slightly tangy soup that’s perfect for sipping or spooning on a hot afternoon.

Ingredients
- 1 ear corn (raw, kernels cut off)
- ½ medium ripe tomato
- ¼ cup cucumber, peeled and chopped
- ¼ cup orange or red bell pepper, chopped
- Juice of ½ lime
- 1 tsp extra virgin olive oil (optional)
- Sea salt and black pepper to taste
- Optional: 1 tbsp red onion or a few fresh basil leaves
Instructions
- Cut kernels from the raw ear of corn and add to a blender.
- Add the tomato, cucumber, bell pepper, and lime juice.
- Blend until smooth, adding 2–3 tablespoons of cold water if needed to reach your desired texture.
- Taste and season with sea salt and black pepper.
- Chill in the fridge for at least 1 hour before serving.
