White beans and sweet potato are a combination I keep coming back to because they are so naturally complementary. The beans bring protein and creaminess. The sweet potato brings depth, color, and natural sweetness. A little smoked paprika ties everything together.

And then there is the chive oil.

It sounds fancy but it takes about three minutes and it transforms a simple soup into something that feels special.

This one is a keeper.

•      2 medium sweet potatoes, peeled and cubed

•      2 cans white beans (15 oz each), rinsed and drained

•      4 cups low sodium vegetable broth

•      Sea salt and black pepper to taste

•      Juice of half a lemon

For the chive oil:

•      3 tablespoons olive oil

•      3 tablespoons fresh chives, finely snipped

•      Pinch of sea salt

Instructions

1.    Heat olive oil in a large pot over medium heat. Add the diced onion and cook for 5 to 6 minutes until softened and translucent.

2.    Add the minced garlic, smoked paprika, cumin, and cayenne if using. Stir and cook for 1 minute until fragrant.

3.    Add the cubed sweet potatoes and stir to coat in the spices. Pour in the vegetable broth and bring to a boil.

4.    Reduce heat to a simmer. Add the white beans. Cook uncovered for 18 to 20 minutes until the sweet potatoes are completely tender.

5.    Use an immersion blender to partially blend the soup, leaving about half the beans and sweet potato intact for texture. Alternatively, transfer two cups of soup to a blender, blend smooth, and return to the pot.

6.    Stir in the lemon juice. Taste and adjust salt and pepper.

7.    Make the chive oil: gently warm the olive oil in a small pan over low heat for 1 minute. Remove from heat. Stir in the snipped chives and a pinch of salt. Let sit for 2 minutes.

8.    Ladle soup into bowls and finish each one with a generous drizzle of chive oil. Serve with crusty bread or crackers if you like.

Make It Your Own
