This easy grilled peach and basil flatbread combines juicy peaches, creamy white beans, fresh basil, greens, and balsamic for a simple summer meal.

Peaches are usually placed firmly in the breakfast, snack, or dessert category.

But one of the things I enjoy most about seasonal eating is finding new roles for familiar foods.

A peach does not know whether it is breakfast or dinner.

This Grilled Peach and Basil Flatbread gives ripe August peaches a savory turn with creamy white beans, fresh basil, greens, and a light balsamic finish.

It feels special enough for Fun Friday but is still simple enough to make without turning the evening into a cooking project.

Why This Recipe Works

Warm peaches become softer and sweeter when grilled or lightly cooked.

The white-bean spread adds creaminess and helps make the flatbread more satisfying.

Fresh basil brings the unmistakable flavor of August.

Grilled Peach and Basil Flatbread Recipe:

Ingredients

For the Flatbread

  • 2 whole-grain flatbreads or naan-style breads
  • 2 ripe but firm peaches, sliced into wedges
  • 1 teaspoon olive oil
  • 1½ cups arugula, baby spinach, or mixed greens
  • ¼ cup fresh basil leaves, torn
  • 1 to 2 teaspoons balsamic glaze or balsamic vinegar
  • Black pepper to taste
  • 2 tablespoons chopped walnuts or pumpkin seeds, optional

For the White-Bean Spread

  • 1½ cups cooked white beans, drained and rinsed
  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil
  • ½ teaspoon Dijon mustard
  • 1 small garlic clove, optional
  • 2 to 4 tablespoons water
  • Black pepper to taste

Directions

  1. Add the white beans, lemon juice, olive oil, Dijon mustard, optional garlic, black pepper, and two tablespoons of water to a food processor or blender.
  2. Blend until mostly smooth, adding more water as needed to create a creamy, spreadable texture.
  3. Brush the peach wedges very lightly with olive oil.
  4. Heat a grill pan, outdoor grill, or skillet over medium-high heat.
  5. Cook the peaches for approximately two to three minutes per side, until warmed and lightly marked or caramelized. Keep the peaches firm enough to hold their shape.
  6. Warm or lightly toast the flatbreads according to the package directions.
  7. Spread the white-bean mixture evenly over each flatbread.
  8. Add the grilled peach wedges.
  9. Top with greens and fresh basil.
  10. Finish with a light balsamic drizzle, black pepper, and optional walnuts or pumpkin seeds.
  11. Slice and serve while the flatbread and peaches are still warm.

No Grill? No Problem

You do not need an outdoor grill.

A grill pan works well.

A regular skillet also works.

The goal is simply to warm the peaches and allow some of the natural sugars to caramelize slightly.

You can also place peach wedges under the broiler briefly, watching them carefully so they do not become overly soft.

Make It Your Own

Use nectarines instead of peaches.

Replace the white beans with a thin layer of hummus.

Add a small amount of goat cheese if that fits your flexitarian style.

Use baby spinach instead of arugula.

Add roasted zucchini or corn.

Include smoked salmon or another protein on the side.

Recipes should give you a starting point, not another set of rules.

Storage

This recipe is best assembled shortly before serving.

The white-bean spread can be prepared in advance and refrigerated for several days.

The peaches can also be grilled earlier, but the flatbread will have the best texture when warmed and assembled just before eating.

Store the components separately rather than refrigerating the finished flatbread.
