Ingredients
Roasted Sweet Potatoes
- 2 medium sweet potatoes, peeled and diced
- 1 tbsp avocado oil or olive oil
- 1 tsp smoked paprika
- 1/2 tsp cumin
- sea salt and pepper
Smashed White Beans
- 1 can cannellini beans, drained and rinsed
- 1 garlic clove, minced
- 1 tbsp olive oil
- 1 tsp lime juice
- 1/2 tsp chili powder
- sea salt and pepper
Tostadas
- 8 corn tortillas
- avocado oil spray or light olive oil
Creamy Avocado Lime Drizzle
- 1 ripe avocado
- 2 tbsp plain yogurt or dairy-free yogurt
- juice of 1 lime
- 1 small garlic clove
- 2 tbsp water
- sea salt
Toppings
- shredded purple cabbage
- chopped cilantro
- sliced radishes
- diced tomatoes
- jalapeño slices
- pumpkin seeds
- lime wedges
Instructions
1. Roast the sweet potatoes
Preheat oven to 425°F.
Toss sweet potatoes with oil, smoked paprika, cumin, salt, and pepper.
Roast 25 to 30 minutes until caramelized and tender.
2. Crisp the tortillas
Place tortillas on a baking sheet.
Lightly spray or brush with oil.
Bake 8 to 10 minutes until crispy.
3. Make the smashed beans
In a bowl, mash beans with garlic, olive oil, lime juice, chili powder, salt, and pepper until slightly chunky.
4. Make the avocado drizzle
Blend avocado, yogurt, lime juice, garlic, water, and salt until smooth and creamy.
Add more water if needed for drizzling consistency.
5. Assemble the tostadas
Spread smashed beans onto crispy tortillas.
