Make it yours
Add a spoonful of plain yogurt for extra creaminess, tuck in sliced cucumber for crunch, or use a lettuce wrap if that's what you have. For extra protein, add baked tofu or a side of edamame.
Prep and storage
Keep roasted filling, greens, and sauce in separate containers. Refrigerate promptly and use the filling within 3–4 days. Warm the filling before assembling so the pita does not get soggy.
It’s simple, affordable, and different enough to make a weeknight feel special. That's my kind of plant-forward cooking.

Crispy Fennel and White Bean Sheet-Pan Pitas
with Lemon-Tahini Sauce
Serves3–4

Ingredients
Sheet-Pan Filling
— 1 large fennel bulb, cored and sliced into thin wedges
— 1 (15-oz) can no-salt-added white beans, drained, rinsed, and patted dry
— 1 small red onion, sliced
— 1 tbsp avocado oil
— ½ tsp smoked paprika
— ¼ tsp ground cumin
To Assemble & Sauce
— 4 small whole-wheat pitas
— 1 cup shredded romaine or cabbage
— 2 tbsp tahini
— 1½ tbsp fresh lemon juice
— 2–3 tbsp water
— 1 small garlic clove, finely grated
Directions
1
Heat oven to 425°F and line a large baking sheet with parchment paper.
2
Toss fennel, beans, and red onion with avocado oil, smoked paprika, and cumin until evenly coated. Spread in a single layer on the prepared baking sheet — do not crowd the pan.
3
Roast 20 to 25 minutes, turning once halfway through, until the fennel is tender and the beans have golden, slightly crisp edges.
4
Whisk together tahini, lemon juice, grated garlic, and water — adding water one tablespoon at a time until the sauce is thin enough to drizzle.
5
Warm the pitas. Top each with shredded romaine or cabbage and a generous spoonful of the roasted fennel and bean filling. Drizzle with lemon-tahini sauce and serve immediately.
Fennel softens and sweetens in the oven, so even people who are unsure about its licorice-like raw flavor tend to enjoy it this way. Patting the beans dry before roasting is worth doing — it helps them develop golden edges instead of steaming. Storage: keep roasted filling, greens, and sauce in separate containers in the refrigerator up to 3 to 4 days. Warm the filling before assembling so the pita does not go soggy.
Healthy Benefits
White beans provide plant protein, fiber, potassium, folate, and magnesium — substantial enough to anchor this as a real meal.
Fennel is rich in vitamin C, potassium, and plant compounds with anti-inflammatory properties — and roasting brings out its natural sweetness.
Tahini adds unsaturated fats, calcium, plant protein, and B vitamins — and makes the sauce without any dairy.
Whole-wheat pitas add fiber, B vitamins, and complex carbohydrates for sustained energy alongside the beans.
Romaine or cabbage adds crunch, vitamin K, and fiber — and keeps the filling from making the pita soggy.
Smoked paprika and cumin add depth of flavor and both contain antioxidant plant compounds.
