And since it is April, I wanted this one to feel a little brighter and more spring-like too.

That is where these Creamy Dark Chocolate Strawberry Mousse Cups come in.

They are rich, smooth, chocolatey, and just festive enough for a fun Friday treat. They feel indulgent, but they are still made with ingredients that bring more to the table than a basic sugar-loaded dessert. So yes, this is absolutely dessert. But it is the kind of dessert that lets you enjoy something decadent without feeling like you completely went off the rails.

That works for me.

I like desserts that feel worth it. If I am going to have one, I want it to taste good, feel satisfying, and not take half the day to make.

This one checks all the boxes.

By April, I am usually ready to lighten things up a little, but that does not mean I stop wanting dessert.

I just want something that feels a little fresher than the heavier winter treats.

This mousse is cool, creamy, rich, and still has that spring feel from the strawberries. It is a nice little in-between dessert. Not too heavy, not too plain, and not trying too hard to be “healthy” in a way that forgets it is supposed to taste good.

Because let’s be honest. If dessert does not really satisfy, it is not much of a dessert.

This one does.

Creamy Dark Chocolate Strawberry Mousse Cups

Serves: 4
Prep Time: 20 minutes
Chill Time: 1 to 2 hours

Ingredients

  • 1 1/2 cups fresh strawberries, hulled
  • 1 ripe avocado
  • 1/3 cup unsweetened cocoa powder
  • 3 ounces melted dark chocolate, slightly cooled
  • 1/4 cup pure maple syrup
  • 1/4 cup canned full fat coconut milk
  • 1 teaspoon vanilla extract
  • pinch of sea salt

Optional toppings

  • sliced strawberries
  • shaved dark chocolate
  • crushed almonds
  • coconut whipped topping
  • cacao nibs

Instructions

  1. Add the strawberries, avocado, cocoa powder, melted dark chocolate, maple syrup, coconut milk, vanilla, and sea salt to a blender or food processor.
  2. Blend until completely smooth and creamy.
  3. Stop and scrape down the sides if needed, then blend again until everything looks silky.
  4. Taste and add a little more maple syrup if you want it sweeter.
  5. Spoon the mousse into 4 small glasses, jars, or dessert cups.
  6. Chill for at least 1 hour until cool and slightly set.
  7. Top with sliced strawberries, a little shaved dark chocolate, or whatever topping sounds good before serving.
