Nice cream — frozen banana blended into a soft-serve texture — has been in my rotation for years. But the strawberry banana version is the one that never gets old. It tastes like something you would get at a real ice cream stand in the middle of July, except it takes five minutes, costs almost nothing, and is made entirely of fruit.

It is also completely plant-based, naturally sweetened, and gentle on digestion. Bonus: frozen bananas are one of the best budget ingredients in a flexitarian kitchen.

Serves 2 · Ready in 5 minutes (plus freezing time)

🍓 Ingredients

  • 3 ripe bananas, peeled, sliced, and frozen overnight (this is the key)
  • 1 cup frozen strawberries
  • 1–2 tbsp plant-based milk (oat or almond work beautifully)
  • Optional add-ins: 1 tsp vanilla extract, pinch of sea salt

To serve:

  • Fresh sliced strawberries
  • A drizzle of tahini or almond butter
  • A few fresh mint leaves if you are feeling fancy

👩‍🍳 Method

  1. Make sure your banana slices have been in the freezer for at least 4 hours — overnight is ideal. Do not skip this step. Ripe, frozen banana is what creates that creamy texture.
  2. Add frozen banana slices and frozen strawberries to a food processor or high-speed blender.
  3. Pulse several times, then blend. It will look crumbly at first. Keep going.
  4. Add plant-based milk one tablespoon at a time until it smooths out into a soft-serve consistency. Less is more here — too much liquid makes it runny.
  5. Add vanilla and a pinch of salt if using. Blend one more time.
  6. Scoop into bowls immediately for soft-serve consistency, or transfer to a freezer container for 30 minutes if you want it firmer.
  7. Top with fresh strawberries, a drizzle of tahini, and mint. Eat immediately and feel zero regret.
