Basil, zucchini, bell peppers, corn, cucumbers, eggplant, blueberries, watermelon, peaches, and purslane.

Today, we are putting them to work.

I do not want this to become another collection of complicated recipes that require a long shopping list, an afternoon of preparation, or ingredients you may never use again.

These are 10 flexible meal ideas you can make, adjust, and repeat throughout August.

Some are cool and refreshing for hot summer days. Others are warm enough to feel satisfying without being overly heavy. Most can be prepared ahead, and every recipe gives you room to substitute what you already have.

This is the one Tuesday in August when I am sharing 10 recipes at once. For the rest of the month, Tuesday posts will slow down and feature one complete recipe at a time.

1. Basil Lemon Lentil Couscous

This simple couscous salad combines lentils, cucumber, fresh basil, and lemon in a meal that works warm, chilled, or at room temperature.

The lentils bring substance, while the cucumber and lemon keep everything feeling fresh. It is an easy lunch to prepare ahead, but it can also become a side dish with fish, tofu, or another protein.

Ingredients

  • 2 cups cooked whole-grain couscous
  • 1½ cups cooked green or brown lentils
  • 1 medium cucumber, chopped
  • ½ cup fresh basil, torn or chopped
  • Juice of 1 large lemon
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • Black pepper to taste
  • Small pinch of salt, optional

Directions

  1. Add the cooked couscous, lentils, cucumber, and basil to a large bowl.
  2. Whisk together the lemon juice, olive oil, Dijon mustard, black pepper, and optional salt.
  3. Pour the dressing over the couscous mixture and toss gently.
  4. Serve immediately or refrigerate until chilled.

Make It Your Own

Add chopped zucchini, pumpkin seeds, white beans, or a handful of greens. Quinoa, millet, or another cooked grain can replace the couscous.

Ingredients

  • 2 large whole-grain wraps
  • 1 cup cooked chickpeas, drained and rinsed
  • 1 small zucchini, cut into thin strips or ribbons
  • ½ cucumber, cut into thin strips
  • 2 cups chopped lettuce or mixed greens
  • 2 tablespoons chopped fresh basil or parsley

Lemon Tahini Dressing

  • 2 tablespoons tahini
  • 1½ tablespoons lemon juice
  • 1 to 2 tablespoons water
  • ½ teaspoon Dijon mustard
  • Black pepper to taste

Directions

  1. Whisk together the tahini, lemon juice, water, Dijon mustard, and black pepper. Add water gradually until the dressing is creamy but pourable.
  2. Lay the wraps flat and divide the greens between them.
  3. Add chickpeas, zucchini, cucumber, and herbs.
  4. Drizzle with the tahini dressing.
  5. Fold in the sides, roll tightly, and cut each wrap in half.

  • 1 cup old-fashioned rolled oats
  • 2 cups low-sodium vegetable broth
  • 1 cup corn kernels
  • 1 cup cooked white beans
  • ¼ cup fresh basil, sliced
  • 1 teaspoon Dijon mustard
  • Black pepper to taste
  • 1 tablespoon nutritional yeast, optional
  • Lemon juice to finish

Directions

  1. Add the oats and vegetable broth to a saucepan.
  2. Bring to a gentle simmer and cook for approximately 5 minutes, stirring occasionally.
  3. Add the corn and white beans.
  4. Continue cooking until the oats are creamy and the beans are heated through.
  5. Stir in the Dijon mustard, black pepper, and optional nutritional yeast.

  • 8 rice-paper wrappers
  • 1 cup shelled edamame, cooked and cooled
  • 1 cucumber, cut into thin strips
  • 1 small bell pepper, cut into thin strips
  • 1 cup shredded lettuce or cabbage
  • ½ cup fresh basil, cilantro, or mint

Simple Dipping Sauce

  • 2 tablespoons tahini or unsweetened peanut butter
  • 1 tablespoon lime or lemon juice
  • 1 teaspoon low-sodium tamari
  • Water as needed
  • Optional pinch of ground ginger

Directions

  1. Whisk together the dipping-sauce ingredients, adding enough water to reach your preferred consistency.
  2. Fill a shallow dish with warm water.
  3. Dip one rice-paper wrapper into the water for several seconds, just until it begins to soften.
  4. Place it on a clean damp surface.
  5. Add edamame, cucumber, pepper, lettuce, and herbs near the lower third of the wrapper.
  6. Fold in the sides and roll tightly.

Roasted eggplant and lentils create a hearty taco filling with plenty of smoky flavor.

The contrast between the warm filling, crisp cabbage, fresh herbs, and lime makes these feel much more interesting than the effort required to prepare them.

Ingredients

  • 1 medium eggplant, cut into small cubes
  • 1½ cups cooked green or brown lentils
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • Black pepper to taste
  • 8 small corn tortillas
  • 2 cups shredded green and purple cabbage
  • Fresh cilantro or basil
  • Lime wedges

Directions

  1. Heat the oven to 425°F.
  2. Place the diced eggplant on a parchment-lined baking sheet.
  3. Toss with olive oil, smoked paprika, cumin, garlic powder, and black pepper.
  4. Roast for 20 to 25 minutes, stirring once, until deeply browned and tender.
  5. Stir the warm lentils into the roasted eggplant.
  6. Warm the tortillas.
  7. Fill each tortilla with the eggplant-lentil mixture.

Blueberries do not have to stay in breakfast.

Their sweetness works surprisingly well with cucumber, quinoa, basil, pumpkin seeds, and lemon.

This colorful salad makes a refreshing lunch and travels well for picnics or meal prep.

Ingredients

  • 2 cups cooked quinoa, cooled
  • 1 cup blueberries
  • 1 medium cucumber, chopped
  • ¼ cup fresh basil, chopped
  • ¼ cup pumpkin seeds
  • Juice of 1 lemon
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • Black pepper to taste

Directions

  • 1½ cups cooked white beans, drained and rinsed
  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil
  • Black pepper to taste
  • 2 ripe peaches, chopped
  • ¼ cup fresh basil, sliced
  • 1 to 2 teaspoons balsamic glaze or balsamic vinegar

Directions

  1. Toast the bread until crisp around the edges.
  2. Lightly mash the white beans with lemon juice, olive oil, and black pepper.
  3. Spread the bean mixture over the toast.
  4. Top with chopped peaches and fresh basil.
  5. Drizzle lightly with balsamic.

10. Warm Purslane Potato and Lentil Salad

Purslane may be the least familiar food in our August lineup, so I wanted to use it in a meal structure that already feels comfortable.

Warm potatoes and lentils soften the purslane slightly while preserving its crisp texture and gently tangy flavor.

Ingredients

  • 1 pound baby potatoes, quartered
  • 1½ cups cooked green or brown lentils
  • 2 cups fresh purslane leaves and tender stems
  • 1 tablespoon Dijon mustard
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • Black pepper to taste
  • Small pinch of salt, optional

Directions

  1. Add the potatoes to a saucepan and cover with water.
  2. Bring to a boil and cook until fork-tender.
  3. Drain well and allow them to cool for several minutes.
  4. Whisk together the Dijon mustard, lemon juice, olive oil, black pepper, and optional salt.
  5. Add the warm potatoes and lentils to a large bowl.
  6. Pour the dressing over them and toss gently.
  7. Add the purslane and fold it into the warm salad just before serving.

Purslane Safety Note

Use purslane purchased from a reliable food source or a plant you can positively identify. Do not eat an unidentified plant simply because it resembles edible purslane.


The Repeat Formula

Here is one of the easiest ways to turn these recipes into dozens of meals:

For example:

Zucchini

  • chickpeas
