🌱 Raw Vegan "Mock" Chicken Meat Recipe 🌱

Ingredients:

  • 1 cup raw sunflower seeds, soaked for 4-6 hours and drained

  • 1/2 cup raw walnuts, soaked for 4-6 hours and drained

  • 1/4 cup nutritional yeast

  • 2 tablespoons lemon juice

  • 2 tablespoons tamari or soy sauce

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon poultry seasoning (a blend of sage, thyme, rosemary, and marjoram)

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • Salt and pepper to taste

  • 1/4 cup water

  • 1 tablespoon ground flaxseeds

Instructions:

  1. Blend soaked sunflower seeds, walnuts, nutritional yeast, lemon juice, tamari, apple cider vinegar, poultry seasoning, garlic powder, onion powder, salt, and pepper in a food processor until coarsely textured.

  2. Mix ground flaxseeds and water to make a flax egg. Let it thicken for a few minutes.

  3. Add the flax egg to the mixture and blend again until dough-like.

  4. Taste and adjust seasonings as desired.

  5. Shape mock chicken meat and place on a dehydrator tray lined with non-stick sheet. Dehydrate at 115°F (46°C) for 6-8 hours.

  6. Use immediately or store in the refrigerator for up to a week.
